Crunchy Tacos with Avocado Lime Dip
Ingredients
Avocado Lime Dip
• 2 avocados
• 3 limes juiced
• 1 jalapeno – leave seeds/vein for spice
• ½ teaspoon salt
• 1 teaspoon taco seasoning – any brand
1 tablespoon water
• ½ cup plain Greek yogurt
Tacos
• 1 can of black beans (15 to 16 oz.) – rinsed and drained
• 1 cup shredded cheddar cheese
• 1 cup of diced bell pepper
• 6 corn tortillas
• 3-4 tablespoons vegetable or olive oil
Directions
1. Sauté diced bell peppers with a 1/2 tablespoon of oil until tender. Then mix with beans in a bowl.
2. Heat 2-3 tablespoons of oil in a skillet over medium-high heat
3. Add two tortillas to the skillet and allow them to heat in the oil for about 10 seconds.
4. Cover one side of each tortilla with ½ cup of bean mixture, and 1 tablespoon of shredded cheese.
5. Using a spatula, carefully fold the tortilla in half, on top of itself and press down with the spatula to shape the taco.
6. Cook 3-4 minutes, then using spatula flip the tacos and cook an additional 3-4 minutes, or until browned and crispy.
7. Continue the process until you run out of bean mixture and tortillas.
8. Blend all ingredients for sauce in a blender or mix with a whisk until desired texture is met.
* Adding onion, cilantro, or pico de gallo would be a great addition!
