How to Make

 

Ingredients

1 tablespoon vegetable oil

2 medium potatoes, cubed

1 green pepper, diced

1 red pepper, diced

4 eggs

½ cup cheddar or jack cheese, grated

Salt and pepper to taste

4 corn tortillas

Preparation

  1. Heat oil in a skillet.
  2. Sauté potatoes for 2-3 minutes; cover and cook until soft.
  3. Add red and green peppers and sauté 2-3 minutes.
  4. In a bowl, whisk the eggs and pour them over the potato and pepper mixture.
  5. Add cheese, salt and pepper, and scramble until eggs are done.
  6. Serve with corn tortillas and salsa, if desired.
